Ingredients

🧈 2 Tbsp unsalted butter, 28 g
🧄 4 cloves garlic, minced
🧂 ½ tsp salt
🌿 ½ tsp oregano
🌶️ ½ tsp crushed red pepper flakes
⚫ ¼ tsp ground black pepper
🍅 ½ cup sun-dried tomatoes, roughly chopped
🥣 1 cup vegetable broth, 236 mL
🥫 2 15-oz cans chickpeas, drained, 425 g each
🥛 1 cup heavy cream
🧀 ½ cup grated Parmesan cheese
🌿 2 Tbsp chopped fresh basil


Instructions

1- Sauté Aromatics:

  • In a large pan over medium heat, add the butter.
  • Once melted, add the minced garlic, salt, oregano, and red pepper flakes.
  • Sauté until the garlic is fragrant and the spices are aromatic, about 1-2 minutes.

2- Incorporate Tomatoes:

  • Stir in the chopped sun-dried tomatoes and cook for an additional minute.

3- Stir in Broth:

  • Pour in the vegetable broth, stirring to combine the ingredients thoroughly.

4- Add Chickpeas:

  • Add the drained and rinsed chickpeas to the pan.
  • Stir well and let the mixture simmer for about 5 minutes, allowing the flavors to meld.

5- Combine Cream and Cheese:

  • Reduce the heat to low and pour in the heavy cream.
  • Add the grated Parmesan cheese and chopped fresh basil.
  • Stir until the cheese has melted and the sauce is creamy and heated through, about 2-3 minutes.

6- Serve or Meal Prep:

  • Remove from heat.
  • The dish can be served immediately or portioned into meal prep containers.
