Dense Bean Salad

This Dense Bean Salad is a nutritious and colorful dish perfect for any occasion. Ingredients

🥫 1 (15.5oz) can Great Northern Beans
🥫 1 (15.5oz) can Chickpeas
🥫 1 (15.5oz) can Red Kidney Beans
🌶️ 1 red bell pepper
🥒 3 Persian cucumbers
🧅 1 red onion
🌿 A handful of parsley, chopped

Dressing
🫒 1/2 cup extra virgin olive oil
🍷 1/4 cup red vinegar
🥄 3 tablespoons Dijon mustard
🍋 Juice of half a lemon
🧄 1 clove garlic, minced
🧂 1 teaspoon salt
🌶️ 1/4 teaspoon black pepper
🌱 1 teaspoon oregano


Instructions

1- Prepare the Dressing:

  • In a "Ball Suretight" mason jar or small bowl, combine the extra virgin olive oil, red vinegar, Dijon mustard, lemon juice, minced garlic, salt, black pepper, and oregano.
  • Secure the lid or whisk vigorously with a spoon to emulsify the dressing until creamy and well mixed.

2- Prepare the Beans:

  • Use a stainless steel colander to drain and rinse the Great Northern Beans, chickpeas, and Red Kidney Beans.
  • Allow the beans to drain completely.

3- Chop the Vegetables:

  • Dice the red bell pepper, Persian cucumbers, and red onion with a chef’s knife on a wooden cutting board.
  • Chop the parsley finely.

4- Combine Ingredients:

  • In a large wooden mixing bowl, combine the drained beans with the chopped vegetables and parsley.
  • Pour the prepared dressing over the bean and vegetable mixture.

5- Toss Everything Together:

  • Using large wooden mixing spoons, gently toss the salad until all ingredients are evenly coated with the dressing.

6- Chill and Serve:
