Grilling Chicken Wings Using the Vortex

The Vortex is a cone-shaped piece of steel that can be used inside of Weber kettle grills. Here I am using it in my 22" Weber.

When used in this configuration, wide on the bottom and narrow on the top, it creates an updraft of heat that reflects off of the dome of the grill, and then back down onto your food. So, you can cook with indirect high heat, with no chance of burning you food - that is unless you fall asleep 😊 The best thing about the Vortex is how evenly it cooks you meats. Here I am using Kingsford Charcoal, topped with a few chunks of oak wood.

It can also be used in other configurations. Turn it upside down, place your coals around it, and then put your meat directly above it for true low and slow smoking.

I have used the Vortex to cook many types of food on the grill. I have found it to be very versatile and is now an importatnt tool in my grilling arsenal.
