Café Brûlot

Café Brûlot is a traditional New Orleans after-dinner cocktail that not only boasts a delightful blend of alcohol and spices but also offers a captivating tableside show. This flaming beverage combines fragrant spices, citrus peels, and strong coffee, creating a sensory experience that warms the soul. Perfect for entertaining guests, this drink captures the essence of festive gatherings and culinary theatrics.

Ingredients

🥃 750ml VS Cognac
🍒 375ml Kirschwasser (cherry eau-de-vie)
🌿 5 cinnamon sticks broken
🌶️ 10 cloves plus additional for studding orange peel
🍊 3 whole orange peels
🍋 3 whole lemon peels
☕ 1qt 32oz coffee
🍯 Demerara syrup
🥃 151 Proof Rum approx. 75% alcohol, highly flammable


Instructions

1- Prepare the Fuel:

  • Pour a small amount of 151 proof rum in the bottom tray of the brûlot stand.

2- Charge the Bowl:

  • Add 2 ounces of the pre-prepared Brûlot Mix (cognac, kirschwasser, cinnamon, cloves, citrus peels) into the top bowl for each guest being served.

3- Prepare the Orange Garnish:

  • Using a Cocktail Kingdom channel knife, create a continuous spiral cut from an orange.
  • Use a paring knife to remove the spiral peel carefully, avoiding breaking it.
  • Stud the orange peel spiral with whole cloves.

4- Ignite the Fuel:

  • Light the rum in the bottom tray using long matches.

5- Heat the Ladle:

  • Submerge the brûlot ladle in the top bowl to heat it.

6- Initiate Flame in Brûlot Mix:

  • Dip the ladle in the brûlot mix, and pour it over the burning rum to transfer the flame to the top bowl.

7- Flaming the Orange Peel:

  • Suspend the clove-studded orange peel spiral over the flame.
  • Use the ladle to pour the flaming mixture over the peel, igniting it to release its oils and aroma.

8- Add Coffee:

  • Pour hot coffee into the brûlot bowl, causing a brief flare-up.

9- Sweeten To Taste:

  • Stir in warmed Demerara syrup, adjusting the sweetness as desired.

10- Serve:

  • Use the ladle to pour the finished Café Brûlot into individual cups.
