Homemade Raspberry Hand Pies - by Sunscape
I got a couple new kitchen gadgets recently and decided to make something with one of them. My son is visiting from Panama, and I thought I would make him something special.
I defrosted a bag of my homegrown Raspberries and thickened them with a little sugar and cornstarch on the stove. When it was thick enough, I let it cool down while I prepared a pie dough recipe.
I made a circle large enough to cover the press and filled one side with the Raspberry filling.
Next, I folded the one side over the other and pressed down firmly. Then trimmed off the excess dough and put the little pie onto a parchment-lined cookie tray.
I basted the hand pies with a beaten egg and pricked them with a fork. I decided that baking them at 400°F. should work and I checked them at the 30-minute mark to see how they were cooking. I let them go for another 20 minutes but that was a little too long as the filling started to ooze from the pies. It was a good thing I had parchment down or it would have been a tough job cleaning it up.
I had enough filling for 4 Raspberry pies and opened a jar of Strawberry Rhubarb, my son's favorite, and made 4 of them too.
He was so excited to have the Strawberry Rhubarb pie since he isn't able to get any in Panama. I told him I bought a Rhubarb plant this past spring and it is now in the garden. Next year I should be able harvest enough to make preserves for him.
Tonight, I'm making him a nice fish dinner; it's time to spoil my 50-year old, lol.
