Happy New Year 2023 to all readers and friends of the Plant Power (Vegan) community. I restart the activity of my blog this year, and this will be, obviously, in my beloved vegan community. For today I have brought a recipe similar to the last one that I shared here, (Painted Beans or Tapiramos); and today I bring you the recipe for some delicious WHITE BEANS, be careful, they are not of the variety known as "lunarias" or "shallots", as they are called in my region, but of the small ones, beans most common targets.

Feliz año 2023 para todos los lectores y para los amigos de la comunidad Plant Power (Vegan). Reinicio la actividad de mi blog en este año, y esto será, obviamente, en mi amada comunidad vegana. Para hoy he traído una receta similar a la última que compartí aquí, (Caraotas Pintadas o Tapiramos); y hoy les traigo la receta para unas deliciosas CARAOTAS BLANCAS, ojo, no son de la variedad conocidas como “lunarias” ni “chalotas”, como se le dicen en mi región, sino de las pequeñas, caraotas blancas de las más comunes.

The scientific name of this legume is Phaseolus vulgaris, although it is a variety, because Phaseolus vulgaris also includes beans of other colors, not just white ones. I think this variety is known outside of Venezuela, as I have seen recipes from other countries, especially when they use it as a base for minestrones. As with tapiramos, these broad beans require a pre-cooking and rinsing process (at least 6 rinsing processes) to extract their characteristic bitterness, and if this technique is not applied, they would be inedible.

El nombre científico de esta leguminosa es Phaseolus vulgaris, aunque es una variedad, porque Phaseolus vulgaris incluye también frijoles de otros colores, no sólo los blancos. Creo que esta variedad sí es conocida fuera de Venezuela, pues he visto recetas de otros países, especialmente cuando la utilizan como base de los minestrones. Tal como ocurre con los tapiramos, estas habas requieren un proceso de precocción y de enjuague, (al menos 6 procesos de enjuague) para extraerles el característico amargor que tienen, y de no aplicar esta técnica, serían incomibles.

THE RECIPE / LA RECETA


Time, ingredients and equipment

  • Preparation time: All grains require time, patience and love to make them delicious, and this recipe is no exception, since it is necessary to invest several hours in their preparation, from cleaning the grains, pre-cooking them, rinsing them, and then cook them and add the other ingredients, for which an average of 5 hours will be required, time that can be reduced with the use of an express cooker; but it can also be extended if the grain is very hard (this is because it has been harvested for several months).

  • Servings: Depending on the appetite of the diners, but there are several servings, approximately 10 dishes, since I prepared 800 grams of white beans.

  • 800 grams of white beans. (Supposedly my husband bought a kilo, because we like to prepare enough, but when he got home and weighed the beans, they were only 800 grams...).

Below I will indicate the amounts of each ingredient, however, this may vary according to the taste of each person. It should be noted that the flavor of these beans is relatively neutral, which allows for many combinations. Today I have prepared them in a simple or basic way.

  • 315 grams of onions.

  • 115 grams of peppers. I generally use 4 units for every 250 grams of beans, so to cook a kilo, I need 16 peppers.

  • 10 grams of garlic.

  • 10 grams of garlic chives, but you can also use cilantro and chives to taste. Another option is to use two vegan cubes.

  • 5 dry bay leaves.

  • 1 tablespoon of capers.

  • 1 level tablespoon of ground cumin.

  • 1 level tablespoon of ground oregano.

  • ½ teaspoon ground turmeric.

  • Salt to taste. You can add pepper too.

  • 2 tablespoons of cornstarch.

  • 1 tablespoon of white vinegar.

  • 1 tablespoon of white sugar.

  • Oil onotado (achiotado) to fry (approximately 150 ml).

  • Sufficient water for the pre-cooking, rinsing and cooking processes.

  • Large pot, strainer, chopping board, knife, ladle, etc.

Tiempo, ingredientes y equipo

  • Tiempo de preparación: Todos los granos requieren de tiempo, paciencia y amor para que queden deliciosos, y esta receta no es la excepción, ya que es necesario invertir varias horas en su elaboración, desde limpiar los granos, precocerlos, enjuagarlos, para luego cocinarlos y adicionarles los otros ingredientes, por lo que en promedio se requerirán unas 5 horas, tiempo que puede reducirse con el uso de una olla exprés; pero también puede alargarse si el grano está muy duro, (esto se debe a que tiene varios meses de haber sido cosechado).

  • Raciones: Dependiendo del apetito de los comensales, pero salen varias raciones, aproximadamente 10 platos, ya que preparé 800 gramos de caraotas blancas.

  • 800 gramos de caraotas blancas. (Supuestamente mi esposo compró un kilo, pues nos gusta preparar suficiente cantidad, pero al llegar a casa y pesar los granos, eran sólo 800 gramos…).

A continuación voy a indicar las cantidades de cada ingrediente, sin embargo, esto puede variar de acuerdo al gusto de cada persona. Cabe señalar que el sabor de estas caraotas es relativamente neutro, por lo permite muchas combinaciones. Hoy las he preparado de forma sencilla o básica.

  • 315 gramos de cebollas.

  • 115 gramos de ajíes. Yo por lo general empleo 4 unidades por cada 250 gramos de granos, así que para cocinar un kilo, requiero 16 ajíes.

  • 10 gramos de ajo.

  • 10 gramos de ajo cebollino, pero también pueden utilizar cilantro y cebollín al gusto. Otra opción es utilizar dos cubos veganos.

  • 5 hojas de laurel seco.

  • 1 cucharada de alcaparras.

  • 1 cucharada rasa de comino molido.

  • 1 cucharada rasa de orégano molido.

  • ½ cucharadita de cúrcuma molida.

  • Sal al gusto. Puedes añadir pimienta también.

  • 2 cucharadas de maicena.

  • 1 cucharada de vinagre blanco.

  • 1 cucharada de azúcar blanca.

  • Aceite onotado (achiotado) para freír (150 ml aproximadamente).

  • Agua suficiente para los procesos de precocción, enjuague y cocción.

  • Olla grande, colador, tabla de picar, cuchillo, cucharón, etc.

THE PROCEDURE / EL PROCESO


We start by cleaning (choosing), the white beans. Then we proceed to rinse them, to cover them with water and precook them over high heat. When we see that the grains are somewhat soft, and some of them have even detached skins, (approximately 40 minutes after putting them on the fire), we proceed to strain and rinse them, at least six times, since they have a strong bitter taste, and this technique eliminates that taste.

Iniciamos limpiando (escogiendo), las caraotas blancas. Luego procedemos a enjuagarlas, para cubrirlas con agua y darles una precocción a fuego alto. Cuando vemos que los granos están algo blandos, e incluso algunos de ellos han desprendido hollejos, (aproximadamente 40 minutos luego de ponerlos al fuego), procedemos a colarlos y enjuagarlos, al menos seis veces, ya que tienen un fuerte sabor amargo, y esta técnica elimina ese sabor.

We add enough clean water, so that they have enough liquid and do not burn, since they will be on the fire for several hours. We proceed to add the salt and spices, such as oregano, cumin, bay leaf and turmeric; and also the finely chopped green dressings, (as I already indicated, I used garlic and chives that I harvested from my plot, in the photo you can see Mr. Morrocoy's mother observing the plant). Stir, cover and cook over medium heat for two hours. Check that they do not run out of liquid, without broth.

Adicionamos suficiente agua limpia, a fin de que tengan líquido suficiente y no se quemen, ya que estarán al fuego por varias horas. Procedemos a añadir la sal y las especias, tales como orégano, comino, laurel y cúrcuma; y también los aliños verdes bien picaditos, (como ya indiqué, yo utilicé ajo cebollino que coseché de mi solar, en la foto pueden ver a la mamá del Sr. Morrocoy observando la planta). Revolver, tapar y dejar cocer a fuego medio por dos horas. Revisar que no se queden sin líquido, sin caldo.

Meanwhile, chop the capers, chili peppers, onions and garlic into small squares and place them in a cauldron, frying pan or pot, and add colored oil (achiotado); and it is very important to use this oil because it gives the recipe a better appearance and a plus of flavor. Next, the vinegar is added, which will allow a better flavor to be extracted from the sauce. Bring this mixture to the fire and fry until the onion is transparent.

Mientras tanto, picar las alcaparras, ajíes, cebollas y ajos, en cuadros pequeños y colocarlos en un caldero, sartén u olla, y añadir aceite coloreado (achiotado); y es muy importante utilizar este aceite porque le da mejor aspecto y un plus de sabor a la receta. Seguidamente se adiciona el vinagre, el cual permitirá extraer un mejor sabor al sofrito. Llevar esta mezcla al fuego y sofreír hasta que la cebolla transparente.

After two hours, the white beans should be softer. Extract an approximate portion of 250 grams of grains and broth, which you will blend in a processor or blender, together with the stir-fry, cornstarch and sugar. This mixture is added to the pot with the rest of the grains, which will add body and flavor to the recipe. Lower the heat to a minimum, cover and cook for two more hours. Stir regularly so that it does not stick to the bottom of the pot and check the amount of liquid from time to time. Add more water if necessary.

Transcurridas las dos horas, deben estar más blandas las caraotas blancas. Extrae una porción aproximada de 250 gramos de granos y caldo, la cual licuarás en un procesador o en una licuadora, junto al sofrito, la maicena y el azúcar. Esta mezcla se adiciona a la olla con el resto de los granos, lo que le aportará cuerpo y sabor a la receta. Bajar el fuego al mínimo, tapar y dejar cocer por dos horas más. Remover con regularidad para que no se pegue al fondo de la olla y verificar la cantidad de líquido de vez en cuando. Adicionar más agua de ser necesario.

At the end of the time, rectify salt and spices, stir and leave on the heat for 15 more minutes. Turn off and let the preparation rest. As always, I recommend waiting until the next day to eat it, because it is a dish with deep and diverse flavors that need to settle and integrate properly to enjoy it better.

Finalizado el tiempo, rectificar sal y especias, remover y dejar al fuego 15 minutos más. Apagar y dejar que repose la preparación. Como siempre, yo recomiendo esperar al día siguiente para comerla, porque es un plato con sabores profundos y diversos, que requieren asentarse e integrarse adecuadamente para disfrutarlo mejor.

This is what the preparation looks like the next day. I proceeded to heat it up again and served it with a side of white rice (with a dash of ketchup), and fried plantain slices. I also accompanied it with a delicious cold papelon with lemon juice. However, this dish can be eaten alone, and with other contours, for example bread, arepas, cassava bread (casabe), pasta, salads, etc., it all depends on the taste of each person. These grains can be frozen to eat later. They can also be cooked longer until they get a thicker consistency. They will always be delicious. Bon Appetite!

Este es el aspecto de la preparación al día siguiente. Procedí a calentarla nuevamente y la serví con un contorno de arroz blanco (con una pizca de kétchup), y tajadas de plátano frito. También acompañé con un delicioso papelón con limón bien frío. Sin embargo, este plato puede comerse solo, y con otros contornos, por ejemplo pan, arepas, pan de yuca (casabe), pasta, ensaladas, etc., todo depende del gusto de cada quien. Estos granos pueden congelarse para comer después. También pueden cocinarse más tiempo hasta obtener una consistencia más densa. Siempre serán deliciosos. ¡Buen provecho!
