Some vegetarian restaurants have betrayed their roots and gone fully plant-based, while others offer vegan knock-offs for cheese and mozzarella.

Vegetarians say they long for dishes like mac and cheese when they eat out. They also doubt the need to mimic the meat experience with fake meat. They feel they are being shoved together with vegans and gluten-free munchers, and losing their identity as a unique group.

Some vegetarians have caved in to veganism for moral or environmental reasons, but others still relish dairy and eggs. They hope restaurants will respect their tastes and offer more diversity and choice for them.
