Lasagna Soup

Ingredients
🫒 2 tablespoons olive oil
🧅 1 large onion, grated
🧄 4 cloves garlic, grated
🍬 1 teaspoon brown sugar
🌿 1 teaspoon Italian seasoning
🌿 1 teaspoon dried basil
🌶️ 1 teaspoon Cajun seasoning
🍅 2 tablespoons tomato paste
🌭 8 ounces Italian sausage
🥩 8 ounces ground beef
🍅 28 ounces crushed tomatoes (high-quality)
🧂 Salt, to taste
🧂 Pepper, to taste
🐔 4 cups chicken broth
🍝 8 ounces lasagna noodles, broken in half
🥛 1 cup heavy whipping cream
🧀 1 cup ricotta cheese
🧀 1/2 cup Parmesan cheese, grated
🌿 1 teaspoon Italian seasoning (for topping)
Instructions
1- Sauté Aromatics:
- In a Dutch oven, heat olive oil over medium heat. Add the grated onion and garlic. Sauté until fragrant, about 3-4 minutes.
2- Toast Seasonings:
- Stir in the brown sugar, Italian seasoning, basil, Cajun seasoning, and tomato paste. Cook for another 2 minutes to allow the flavors to meld.
3- Cook Meats:
- Add the Italian sausage and ground beef. Brown the meats, breaking them up with a spoon, until they are no longer pink, about 5-7 minutes.
4- Add Tomatoes & Broth:
- Pour in the crushed tomatoes and chicken broth. Season with salt and pepper to taste. Bring the mixture to a boil.
5- Cook Noodles:
- Add the broken lasagna noodles to the pot. Reduce heat to a simmer and cook until the noodles are tender, approximately 10-12 minutes.
6- Prepare Cheese Mixture:
- In a small bowl, combine the ricotta cheese, half of the Parmesan cheese, and a bit of Italian seasoning. Mix well.
7- Finish Soup:
- Once the noodles are done, stir in the heavy whipping cream. Adjust seasoning with more salt, pepper, and Italian seasoning as needed.
8- Serve:
- Ladle soup into bowls, add a dollop of the ricotta mixture, and sprinkle with additional Parmesan cheese. Serve with garlic toast for a complete meal.
