正是出梭子蟹的季节。

八月一号东海开渔,市场的梭子蟹又肥又便宜。怎么烧才好吃呢?

今天学了一道梭子蟹的新烧法。

梭子蟹冲洗干净,把肚脐这里扳开来,放入一点猪油和盐,再盖回去。

买一把芹菜,连根和叶,洗干净后切成几段,铺在铁锅上,再把处理好的梭子蟹放在芹菜上。

先用大火,烧到可以明显闻到芹菜的香气,再用小火焖十分钟左右。就可开食。

这种烧法叫芹菜焗梭子蟹。

它完全靠芹菜里面出来的水蒸气就把梭子蟹给蒸熟了,熟了以后香气又全部是浸在梭子蟹里面的,梭子蟹会就会变得非常之香,有芹菜的香气。

然后化开的盐跟猪油浸到梭子蟹的身体里面,现在这个时候梭子蟹有膏,有猪油进去,所以膏会变得非常润滑,梭子蟹就非常好吃。
