Chicken Tikka Masala
Ingredients:
For Chicken Tikka:
Chicken – 500 gm
Yoghurt – 2 tbsp
Red chilli powder – 1/2 tsp
Turmeric powder – 1/4 tsp
Coriander powder – 1/2 tsp
Cumin powder – 1/4 tsp
Garam masala – 1/2 tsp
Lemon juice – 1/4 tsp
Salt – to taste
Oil – to fry
For Masala:
Onion – 1 (chopped)
Ginger-garlic paste – 1 tsp
Tomato puree – 400gm – puree of 4 tomatoes
Turmeric powder – 1/4 tsp
Coriander powder – 1 tsp
Red chilli powder – 1 tsp
Garam masala – 1/2 tsp
Fenugreek leaves (kasuri methi) – 1 tbsp
Coriander leaves – 2 tbsp (chopped)
Pepper – to taste
Fresh cream – 3 tbsp
Butter – a cube
Salt – to taste
Method:
To prepare the Chicken Tikka:
-Marinate the chicken yoghurt, red chilli powder, turmeric powder, coriander powder, cumin powder, garam masala, lemon juice.
-Keep it aside for at least an hour or so.
-Take a pan, pour oil and fry the marinated chicken.
-Instead of frying, you can also bake it in the oven or if you have a tandoor that’s the best!
-Chicken Tikka is ready!
To prepare the masala:
-Place a pan on heat and pour some oil and add cumin seeds and bay leaf. Saute it well.
-To this add chopped onion and ginger – garlic paste and saute very well.
-Next, add turmeric powder, coriander powder, red chilli powder, garam masala and saute.
-Now, add the tomato puree, salt and pepper and allow it to cook for sometime until it becomes thick in consistency.
-If needed add water at this time.
-Once it is cooked, turn off the flame and allow it to cool and then blend it into a fine paste using a blender.
-Pour the blended mix back to the pan and cook for another minute.
-Now add the fried chicken tikka, fresh cream, chopped coriander leaves, dried fenugreek leaves (kasuri methi), butter and mix well.
-Transfer this into a serving bowl and add a splash of fresh cream more and few chopped coriander leaves on top..
-Serves best with Butter Naan.
