Today, I’m sharing a recipe for a balanced lunch that provides protein, vitamins, and minerals by combining grains, meat, rice, legumes, and vegetables. The dish features rice with lentils and chicken stew (with potatoes). Rice is a lunch staple often paired with proteins like chicken, beef, or pork chops, and usually served with a salad; however, this time I decided to combine it with lentils. Lentils are rich in iron and vitamins and serve as a source of plant-based protein. It is simple to prepare, and you can use whatever vegetables you prefer. I invite you to join me in making it.

Hoy les comparto una receta para un almuerzo balanceado, que aporta proteínas, vitaminas y minerales, combinando cereales, carne, arroz, legumbres y verduras. El plato incluye arroz con lentejas y estofado de pollo (con papas). El arroz es un alimento básico para el almuerzo, que suele acompañarse de proteínas como pollo, carne de res o chuletas de cerdo, y generalmente se sirve con ensalada; sin embargo, esta vez decidí combinarlo con lentejas. The first step was to wash the lentils and cook them on the stove over high heat for about 40 minutes until tender; I added two chili peppers for flavor.

While the lentils were cooking, I washed the vegetables, removed the seeds and skins, and divided the produce into two portions—one for the meat and the rest for the lentils. I cut the vegetables into thin strips, crushed the garlic, and sautéed the mixture. Then, I added the lentils and salt to taste, letting everything simmer over low heat to release the juices and enhance the flavor.
Mientras se cocinaban las lentejas, lavé las verduras, les quité las semillas y la piel, y dividí los ingredientes en dos porciones: una para la carne y el resto para las lentejas. Corté las verduras en tiras finas, machaqué el ajo y salteé la mezcla. To prepare the meat, I removed the seeds from the remaining vegetables, blended them with a little food coloring, and set the mixture aside.

Next, I cut the meat and potatoes. I placed a pot on the stove and added the blended vegetables, meat, and potatoes, along with salt to taste. I cooked the mixture over medium heat for 30 minutes, adjusted the seasoning, and—once the meat was fully cooked—turned off the heat and let it cool.

To prepare the rice, I added four cups of water, two cups of rice, and salt to taste, and cooked it over high heat; once the water boiled, I lowered the heat to medium, covered the pot, and let it cook for 12 minutes, then removed it from the heat and served it with lentils and beef stew.
