I’d say most beans are good to drink after 24 hours but ideally you would want 3 days. Some coffees will need up to week to degas though
Namely coffees from east Africa. From what I heard the main danger in not letting beans degas is just expansion of volume that their container can't withstand
I doubt it negatively affects flavor (the act of keeping them in a sealed container) You could certainly try it. I usually just lay my beans out flat on a large pan for 12 hrs post roast
then I bag them
I've brewed straight from cool down/roasting: espresso, french press, and cold brew with good results but beans definitely age well after a few days
I like 5-7 days usually. Well, it used to be hard for me, until I realized how important it is to wait. But once I roast again, I'm only just starting to enjoy the new batch that's actually ready, anyway :- ) . But here's an interesting one for you - A few weeks ago I got a bag from Burundi from Sweet Marias, and I had waited about 4 days. The first time I tried it, it was HORRIBLE. Honestly it tasted like moldy lettuce, or a rotten peanut or something. I had to pour out the brew. The next day I tried it again, and SAME THING. So then I even sent them an email saying that I think something is wrong with this batch of beans. They responded and said that they experienced the same thing - put the beans away for another few days then try them again. And you know what? They were delicious!!!!!!!!!!!! Lol, so it's incredible what a few days can do.
