Hola. Existen infinidad de recetas para cocinar el bacalao, pero una de las más irresistibles y sabrosas es, sin duda, el bacalao con tomate. Hay mil formas de preparar este plato, y yo nunca sigo exactamente la misma receta. Hoy me he decantado por una versión con verduritas pochadas, una generosa salsa de tomate y un toque final de mahonesa gratinada que le da un punto delicioso. Os cuento los detalles y los ingredientes que he usado.

Estos son los protagonistas de hoy: dos lomos de bacalao, pimiento verde (sí, verde, porque el rojo brillaba por su ausencia en la tienda), cebolla, patata, un poco de harina, ñora - pimiento rojo seco muy aromático que da vida a los mejores guisos de pescado - y, por supuesto, salsa de tomate.

Lo primero es rebozar con harina y freír el bacalo. Lo frío con aceite de oliva bien caliente para que se dore por fuera pero no se haga por dentro.

En ese mismo aceite, bien filtrado para quitarle la harina que soltó el bacalo, pocho las verduras. Cuando ya están casi hechas le añado un chorrito de Brandy. Después las patatas , la salsa de tomate y dejo cocer a fuego lento hasta que las patatas están casi hechas.

Cuando están casi hechas, añado el bacalo y dejo cocer por 10 minutos, 5 de cada lado.

Mientras cuece el bacalo hago la mahonesa

El toque final. Cubrir los lomos de bacalao con una generosa capa de mahonesa y gratinar hasta que se dore.

Ya solo queda emplatar y disfrutar de los sabores del mar con unos mejillones en escabeche y unos deliciosos berberechos. Todo regado con un vino blanco bien fresquito.

Hello. There are countless recipes for cooking cod, but one of the most irresistible and delicious is, without a doubt, cod with tomato sauce. There are a thousand ways to prepare this dish, and I never follow exactly the same recipe. Today, I've opted for a version with sautéed vegetables, a generous tomato sauce, and a final touch of gratinated mayonnaise that gives it a delicious twist. I'll tell you the details and the ingredients I've used.

These are today's stars: two cod fillets, green bell pepper (yes, green, because the red one was conspicuously absent from the store), onion, potato, a bit of flour, ñora - a very aromatic dried red pepper that brings life to the best fish stews - and, of course, tomato sauce.

The first step is to coat the cod with flour and fry it. I fry it in very hot olive oil so that it browns on the outside but doesn't cook through on the inside.

In that same oil, well filtered to remove the flour released by the cod, I sauté the vegetables. When they're almost done, I add a splash of Brandy. Then I add the potatoes and the tomato sauce, and let it simmer until the potatoes are almost cooked through.

When they're almost done, I add the cod and let it cook for 10 minutes, 5 minutes on each side.

While the cod is cooking, I make the mayonnaise.

Cover the cod fillets with a generous layer of mayonnaise and gratinate until golden brown.

All that's left is to plate and savor the flavors of the sea with some pickled mussels and delicious cockles. Everything washed down with a nicely chilled white wine.
