Me gusta mucho preparar meriendas para compartir a la hora de la tarde con mi familia, siempre estoy ideando recetas o buscando tutoriales en internet , jejeje; o a veces simplemente busco lo que tengo en la nevera y después que tengo los ingredientes entonces me pongo a ver qué puedo preparar con eso? Jaja.
En esta oportunidad preparé el día de hoy una torta de coco a la cual les agregué un arequipe que tenía en casa que yo misma había preparado y que en otras oportunidades les he compartido la receta de su preparación; el resultado fue un pastel muy muy delicioso que disfrutamos en la merienda familiar, les muestro la preparación.

I really enjoy making snacks to share with my family in the afternoon. I’m always coming up with recipes or looking for tutorials online, hehehe; or sometimes I just see what I have in the fridge, and once I have the ingredients, I start thinking about what I can make with them. Haha.
Today I made a coconut cake to which I added some caramel sauce I had at home—which I’d made myself and whose recipe I’ve shared with you before. The result was a very, very delicious cake that we enjoyed during our family snack time. Here’s how I made it.
coco rallado, 250 gr de harina trigo, 180 gr de azúcar, 2 huevos, 150 ml de aceite, esencia de vainilla
shredded coconut, 250 gr of wheat flour, 180 gr of sugar, 2 eggs, 150 ml of oil, vanilla extract
En una taza coloqué los dos huevos y el azúcar, mezclé muy bien, luego incorpore el aceite, seguidamente fui agregando el harina de trigo mezclando hasta que no quedaran grumos; agregué esencia de vainilla, cuando la mezcla estuvo lista agregué el coco rallado y lo incorporé completamente.
Esta mezcla la llevé a una bandeja previamente engrasada y enharinada y allí le agregué porciones de dulce de leche o arequipe, llevé al horno a 180 grados por 45 minutos.
I placed the two eggs and the sugar in a bowl, mixed them very well, then added the oil. Next, I gradually added the wheat flour, stirring until there were no lumps left; I added vanilla extract, and when the mixture was ready, I added the shredded coconut and mixed it in completely.
I poured this mixture into a baking pan that had been greased and floured, then added dollops of dulce de leche or arequipe. I baked it at 180 degrees for 45 minutes.
Una vez que estuvo lista retiré del horno, dejé reposar, luego desmoldé y la corté en trozos; la disfrutamos en familia acompañada de una rica y calentita taza de café ☕
