Making raw sushi

Sushi is one of my favourite things and trying to do mostly raw vegan at the moment i have been trying to recreate it. Honestly I didn’t really like any recipes I found so I made my own which I love.

I’m not great with amounts and a bit more of a throw it in and taste it person so I haven’t listened exact measurings. I’m also useless at cutting sushi I think my knife isn’t sharp enough lol.

To make the ‘rice’ I used cauliflower but yesterday I used carrot and parsnip. Any combo of these works well.

I put it in the blender, around one parsnip and 4 carrots or half a cauliflower and then I blended it with parsley, a tablespoon of Tahini, a clove of garlic, a few splashes of Apple cider vinegar, a tablespoon of nutritional yeast,a tiny sprinkle of chill flakes, salt and pepper to taste, a few shakes of red miso paste if you hAve it in and 2-4 dates. Blend till held together and spread it onto a nori roll with avocado and tofu thinly sliced on top. I know tofu isn’t raw but I follow a kind of 85/15 type raw diet. Then I severed with soya sauce and kimchi.

J also made a matcha latte to stay in keeping and I love the way it formed a little heart.

I think I was inspired by how obsessed the Japanese are with matcha, at least if the Japan centre is anything to go by where I went for my nori sheets
