Walnut Rolls

Hi Friends!

We are back to -21C today. Yesterday was rather nice for 2 days, it was only -8 C. But that's not really what I wanted to share. I also had a car accident last night. I stopped at stopping sign, no car opposite me, then lots of cars driving through the road in front of me, then when the last car was driving through, I saw a car stopped opposite me. I gave him a way to drive first as he was going straight while I wanted to turn left. He waited, perhaps since he saw me been stopping at the stopping sign for a bit, who knows why he waited. So seeing that he didn't drive still, I was like thinking, ah maybe he was giving me the turn, so I looked left and right, and hit gas, and apparently he was thinking the same, why I waited still when he wasn't moving, so he hit gas as well. So yep. We almost collided. We hit brake super close one to another. Crazy. Winter driving at night is crazy for sure ๐Ÿ˜ตโ€๐Ÿ’ซ Next time I will wave like nuts when I'm giving a way, so opposite driver(s) would know (that I am nuts ๐Ÿ˜).

Here is the recipe for the Walnut Rolls ๐Ÿ˜Š This recipe make 2 large rolls if not 3 smaller size ๐Ÿ˜Š (whoa! So many nuts talk today ๐Ÿคฃ)

3 c walnut fine meal
1 c sugar
2 tsp vanilla essence
1 c milk

1 kg flour
A pinch of salt
400 g unsalted butter

250 ml lukewarm milk
1 tbsp sugar
2.5 tsp active dry yeast

100 g icing sugar
2 yolks

1 egg, separate

Let's make the filling first.

Cook fine meal walnut, sugar, vanilla, and milk til bubbly and mixed well. Take off from heat and stir in a large handful golden raisins. Let cool to room temperature completely. This can be prepared a day in advance.

In a bowl, mix sugar, lukewarm water and yeast. Let stand til bubbly

In a bowl, mix flour, salt and butter til coarse, add in icing sugar, yolks, then pour in yeast. Knead

Divide dough into 3, wrap, let rest for 1 H

Roll flat dough, spread filling, roll as you would jelly roll. Brush with beaten yolks, let rest for 40 mins

Brush again with yolks, let rest for 20 mins

Poke holes and brush with egg white

Bake for at least 35 mins, on preheated 350 F
