Stuffed Pork Chops and Corn on the Cob - by Sunscape

Yup, in the heat of summer I was craving stuffing. I had two thick-cut pork chops in the freezer that needed cooking. Besides, I had a loaf of bread that I had cubed and dried just waiting for the special day.

First, the chops have to get a nice coating of seasoning and let them rest while I prepare the stuffing.

Onion, celery, Italian sausage, and Italian seasonings, with a touch of salt and pepper to taste. Simmer until veggies are softened, then stir in day-old bread cubes, mixing well. Add as much broth as needed to moisten the bread, but not too soggy.

I always add sweet Italian sausage to my herb stuffing, which gives it a great flavor. Once that is made, I slit the middle of the chops to make a pocket for the stuffing.

It usually takes approximately 45 minutes to one hour to cook the pork chops at 350°F. oven. I had fresh corn on the cob and two sweet potatoes to add as sides. It was a delight to enjoy a fall-type meal in the midst of summer. Are you craving anything special these days?
