Chicken Curry with Rice Noodles - by Sunscape
I was craving some type of Curry dish for dinner, and I just threw what I had on hand together and it came out pretty tasty.
After chopping up the homegrown carrots, green beans, and onions, I roughly chopped some frozen ginger and took out one of the Lemongrass wands I made last fall.
I boiled some chicken stock with the Lemongrass to infuse the lemon flavor.
It was time to add all the spices, chicken chunks, and veggies to the pot. I let it simmer until the chicken was cooked through.
It smells so amazing and I can hardly wait until we sit down to eat.
I had heated up some more chicken stock to slightly cook the rice noodles. It only takes a few minutes, if you leave them in too long, they get overdone. I drained them quickly and served dinner.
With a slice of Lime to finish off the flavorings, I have to admit for using vegetables that I had on hand, the Curry came out very good. I should really look up traditional recipes and give them a go. Perhaps someone here on Hive has some good Curry dishes to share.
