Cecina
Yecapixtla is a town in Morelos, Mexico, considered the world capital of “cecina,” a traditional dish made with salted beef that is dried in the sun. It is a very thin cut with a truly unique flavor, ideal for grilling. From my recent visit to Yecapixtla, here are some photos of how cecina is prepared.
