Recipe for a Budget-Friendly Meal for our Dinner today, Egg Curry with Coconut Milk, Potatoes and Carrots
Hello again hivers of this community, today’s recipe is a budget friendly meal because we are using egg as our main ingredient for today’s dish. We usually boil or just fry eggs for our go to meal especially for breakfast. This time I’m going to share to you a meal that can also be cooked using an egg. Curry recipe is cooked using meat of chicken or duck, if you are on a tight budget and you are craving for some dish like this, you can try this recipe that I’m going to share. The outcome was really tasty and still a delicious food.

Ingredients:
4 pcs. boiled egg
2 pcs. medium-sized potatoes
1 pc. carrots
1 tablespoon curry powder
½ cup coconut milk
1 tsp. salt
1 tsp. pepper
3 cloves garlic
1 pc. onion
1 thumb-sized ginger
Preparation:
Boil the eggs for 10 minutes, peel then set aside. Chopped potatoes and carrots into cubes. Chopped finely the garlic, onion and ginger.
Cooking Time:
In a pan, fry the eggs until the sides are golden brown, set aside. Fry the potatoes and carrots, then set aside.
In the same pan, sauté the onions, garlic and ginger until aromatic then add the eggs, Next is to add the potatoes and carrots, cover and cooked for another 3 minutes or until the potatoes and carrots are already soft. Taste then add now some salt, sauté for 2 minutes, add the curry powder then cook for another 1 minute.
You can now add the coconut milk, add ½ cup water if need, add the pepper.
Serve while still hot, we now have a budget-friendly meal for our dinner. Egg curry for tonight. This was perfect served with a cold soda. Then we thank God for our delicious meal.
