I Cooked a Juicy, Crispy Fried Chicken with a Home-made Gravy for my Kids and Milk-Fish with String Beans for our Dinner

As a mom, I always feel good every time I cooked for my family. Cooking became my stress reliever and it was really satisfying every time I saw my family enjoying what I served to them. I want to share with you my dear hiver friends want I cooked yesterday’s lunch and dinner for my family.
Fried chicken was a food that was really loved by everyone, here in the Philippines you can see a lot of food courts that serves fried chicken. It’s been a long time since we ate fried chicken so I decided to cooked it for lunch. I bought a half kilo of chicken thighs good for us, because we are only a family of four.
Wash the chicken thoroughly, then I brine it with water, about 2 tsp. of salt and 5 cloves of garlic. I just brine the chicken so that it will become juicier. Then for the coating of the chicken, I just bought a pack of crispy fry, 3 tablespoons of flour, and two tablespoons of cornstarch. After an hour of brining the chicken. I prepare the coating, for the wet coating, I just scoop 2 tablespoons on the mixture that I prepare then add about 1/8 cup of water.
Coat the chicken first with the wet coating then dry coating, press the chicken while coating it so that it would absorb the mixture. I made a total of four cuts, then deep pan fry it, and cook for at least 10 minutes.
For the gravy just add a tablespoon of margarine or butter, 2 tablespoons of flour, then a half cup of water, when the flour was already melted, add a half beef cubes then a tsp. of pepper and I also added a tsp. of soy sauce to enhance the color of the gravy.
My son was really happy after seeing the fried chicken I cooked for him, he thought it was “Jollibee”, a well-known fast-food restaurant here at our country. I really feel good when my son enjoys and eat the food I cooked with a wide smile on his face. The gravy tastes so good, it was really the best sauce for a fried chicken.
Our dinner was just simple; my husband bought a piece of milk-fish or what we call “bangus” on our local. Since we had a fried chicken for lunch, I decided to cook it with soup and for vegetables I added some string beans.
In a casserole I added the milk fish together with onion, a thumb-size ginger, salt and seasonings to taste, then 2 cups of water. Then cook it on a low-medium fire setting. When it was already boiling, I just added the string beans. Then cook it for another 5 minutes.
Our food, was done. A food that was enjoyed by my family really makes me feel good, their simple smile upon eating what I cooked for them was priceless, as a mom, I always make sure that even if it was a simple recipe, I cooked it with love and a sincere heart. That what makes my food more delicious and special for my family.
