A la hora de cocinar ademås de especias me encanta usar hierbas aromåticas, de hecho en casa tenemos orégano, hierba buena, albahaca, romero, culantro, y quizås alguna otra que de momento no recuerdo, y cada una de ellas tienen un lugar especial en mi cocina, pero el romero sin dudas es mi favorita ya que aporta muchísimo sabor y aroma a la comida, y el día de hoy les comparto una receta absolutamente deliciosa y bastante comoleta, se trata de pollo a la naranja con romero, papa y batata.

When it comes to cooking, as well as spices, I love using fresh herbs; in fact, at home we have oregano, mint, basil, rosemary, coriander, and perhaps a few others I can’t quite remember right now, and each of them has a special place in my kitchen, but rosemary is undoubtedly my favourite as it adds so much flavour and aroma to food. Today I’m sharing an absolutely delicious and quite hearty recipe with you: chicken with orange, rosemary, potatoes and sweet potatoes

Generalmente suelo cocinar el pollo en el sartĂ©n elĂ©ctrico por lo mĂĄs rĂĄpido, pero en esta oportunidad al usar ingredientes que me gustan mucho, decidĂ­ hacerlo en el horno, ya que sin lugar a dudas le da un toque muy especial, y por dicha no me equivoquĂ©, el pollo, tanto las verduras quedaron en su punto, sĂșper ricos y con un colorcito que provoca.

I usually cook chicken in an electric frying pan as it’s the quickest way, but this time, as I was using ingredients I really love, I decided to cook it in the oven, as it definitely gives it a very special touch – and I’m glad I did: both the chicken and the vegetables were cooked to perfection, absolutely delicious and with a lovely colour.

Ingredientes

Pollo en piezas (segĂșn la cantidad de comensales)
3 papas medianaa
3 batatas medianas
2 naranjas
1/2 cebolla
3 ajĂ­es
2 dientes de ajo
2 ramitas de romero
Orégano fresco
1 cucharadita de comino
1/2 cucharadita de paprika
4 cucharadas de aceite

Ingredients

Chicken pieces (depending on the number of guests)
3 medium potatoes
3 medium sweet potatoes
2 oranges
1/2 onion
3 chillies
2 cloves of garlic
2 sprigs of rosemary
Fresh oregano
1 teaspoon of cumin
1/2 teaspoon of paprika
4 tablespoons of oil

Procedimiento/Procedure

En este receta, van juntos al horno, el pollo con las verduras, asĂ­ que necesitamos tener todos los componentes del plato listos antes de comenzar a cocinar, asĂ­ que iniciaremos lavando y exprimiendo las naranjas. En mi caso, no estaban muy dulces asĂ­ que decidĂ­ agregar una cucharada grande de azĂșcar.

In this recipe, the chicken and vegetables go into the oven together, so we need to have all the ingredients ready before we start cooking. We’ll begin by washing and juicing the oranges. In my case, they weren’t very sweet, so I decided to add a generous tablespoon of sugar.

Lo siguiente es cortar en piezas medianas las papas y las batatas previamente lavadas minuciosamente, ya que las usé con su piel.

Next, cut the potatoes and sweet potatoes – which I’ve washed thoroughly beforehand – into medium-sized pieces, as I’m using them with their skins on.

Listo este paso procedemos a cortar finamente la cebolla, los ajies, el ajo, una ramita de romero y el orégano fresco.

Once this step is complete, finely chop the onion, chillies, garlic, a sprig of rosemary and the fresh oregano.

En este punto ya tenemos todos los componentes de nuestro plato listo y los llevaremos todos juntos a una bandeja donde agregaremos las especias, el aceite, la sal, y la otra ramita de romero entera.

Mezclamos todo muy bien, levamos al horno precalentado a 200° y dejamos cocinar muy bien nuestro pollo, que como ven, no solo tiene un color hermoso, sino que su sabor es realmente delicioso y ni hablar de la salsita que se formó y el sabor de las verduras al horno. Sin dudas todo un acierto esta receta.

At this point, all the components of our dish are ready, and we’ll place them all together on a baking tray, where we’ll add the spices, oil, salt and the other whole sprig of rosemary.

Mix everything together thoroughly, place in an oven preheated to 200°C and cook the chicken thoroughly. As you can see, not only does it have a beautiful colour, but it tastes absolutely delicious, not to mention the lovely sauce that has formed and the flavour of the roasted vegetables. This recipe is definitely a winner.
