Hello foodies, cómo van? Por aquí paso para compartirles lo que fue nuestro desayuno en casa hace unos días, y como ven en la imagen de portada se trató de unas empanaditas. Plato emblemático de nuestro país, y especialmente de mi isla bella de Margarita, y aunque no las preparamos muy seguido (no por gusto, sino por salud), yo diría que una a dos veces al mes las comemos en casa.
Generalmente para prepararlas trato de tener variedad de rellenos, y lo que hago es que cuando preparo algunas comidas en casa (caraota, pescado, carne molida) guardo porciones en el freezer especialmente para preparar estas delicias y sentirme tal cual como si las comiera en la calle, ya que tengo para elegir 🤤
Hello foodies, how are you doing? I’m stopping by to share what we had for breakfast at home a few days ago, and as you can see in the cover photo, it was some empanaditas. They’re a classic dish in our country, especially on my beautiful island of Margarita, and although we don’t make them very often (not because we don’t like them, but for health reasons), I’d say we eat them at home once or twice a month.
I usually try to have a variety of fillings on hand, and what I do is, when I cook certain meals at home (beans, fish, ground beef), I set aside portions in the freezer specifically to make these little treats and feel just like I’m eating them on the street, since I have so many options to choose from 🤤
Como saben la preparación de estas delicias varían según el estado de nuestro país en el que se preparen, e incluso cada familia tiene su forma tanto de prepararlas como de disfrutarlas. En mi casa, como buenos orientales le ponemos su toque de azúcar a la masa, y en cuanto a su forma, con Miranda me toca seguir ciertas pautas, ya que a mi hija no les gustan muy crujientes ni con los bordes irregulares, pero si hay algo en lo que los cuatro coincidimos, es que la salsa no puede faltar, y en este caso mi hijo Matías preparó una salsa de ajo y cilantro que le quedó brutal. As you know, the way these treats are made varies depending on the state of our country where they’re prepared, and even within each family, there’s a unique way of both making and enjoying them. At my house, like good Easterners, we add a touch of sugar to the dough, and as for the shape, with Miranda I have to follow certain guidelines, since my daughter doesn’t like them too crispy or with irregular edges, but if there’s one thing all four of us agree on, it’s that the sauce is a must, and in this case, my son Matías made a garlic and cilantro sauce that turned out amazing. Ingredientes
Para la masa
3 tazas de harina de maíz precocido
3 y 1/2 tazas de agua
Sal al gusto
Azúcar al gusto
Aceite
Rellenos
Queso blanco rallado
Jamón
Caraotas cocidas
Carneme molida cocida
Plátano frito
Para la salsa
1/4 de taza de mayonesa
1 cucharadita de vinagre
3 dientes de ajo
Una ramita de cilantro
Agua c/n
Sal y pimienta al gusto
Ingredients
For the Dough
3 cups precooked corn flour
3 1/2 cups water
Salt to taste
Sugar to taste
OilFillings
Grated white cheese
Ham
Cooked beans
Cooked ground beef
Fried plantainsFor the sauce
1/4 cup mayonnaise
1 teaspoon vinegar
3 cloves garlic
A sprig of cilantro
Water as needed
Salt and pepper to taste
Procedimiento/Procedure
Lo primero que haremos para preparar estas empanadas es la masa, y yo, a diferencia de las recetas que he visto por la web, no le añado harina de trigo, sino únicamente harina de maíz precocida, ya que me parece que de esta forma quedan mucho más crujientes, y para la preparación de esta, les cuento que soy de las que la preparan de la manera correcta, es decir primero agua, luego la sal y el azúcar, un chorrito de aceite y finalmente la harina de maíz precocida. La dejo reposar cinco minutos y luego amaso.
The first thing we’ll do to make these empanadas is prepare the dough, and unlike the recipes I’ve seen online, I don’t add wheat flour—just precooked cornmeal—because I find that this makes them much crispier. As for how I prepare it, I’m one of those people who does it the right way: that is, water first, then the salt and sugar, a splash of oil, and finally the precooked corn flour. I let it rest for five minutes and then knead it.
Una vez tengo lista la masa organizo todos los rellenos en diferentes envases junto con una cucharita y cortamos un cuadrado de plástico (bolsa plastica del súper) sobre el cual vamos a extender la masa y formar las empanadas.
Once the dough is ready, I arrange all the fillings in different containers along with a teaspoon, and we cut a square of plastic (from a grocery bag) on which we’ll roll out the dough and shape the empanadas.
Sobre el plástico vamos a pasar nuestros dedos untados en aceite, hacemos una bolita pequeña de masa y con los dedos presionamos hasta hacer la base de la empanada que en mi caso la dejo bien delgadita (no me gustan las empanadas gruesas), agregamos el relleno, y en esta oportunidad hice diferentes combinaciones como queso y plátano, caraota y queso, caraota, queso y plátano y otras de queso, carne molida y jamón y queso. Seguidamente doblamos el círculo y sellamos las orillas con los dedos, y de esta forma estamos listos para comenzar a freír.
Tip
Últimamente para trabajar más rápido uso un plástico sobre el cual voy dejando las empanadas ya armadas y no tengo que armar cada vez que saco las empanadas de la sartén, sino que tomo una de las que tengo ahí, y listo. La producción no se detiene 🤣🤣🤣

Tip
Lately, to work faster, I use a plastic sheet where I place the assembled empanadas as I go. That way, I don’t have to assemble them every time I take them out of the pan—I just grab one from the sheet, and I’m good to go. Production never stops 🤣🤣🤣

En cuanto a la salsa nuestra favorita es la salsa de ajo con cilantro, y mi hijo Matías es todo un experto preparándola. Lo que hacemos es llevar todos los ingredientes a la procedadora y procesar todo hasta que quede una crema que iremos aligerando con ayuda de un poco de agua hasta que tenga la consistencia deseada y de esta forma estamos listos para disfrutar de nuestras empanadas.

As for the sauce, our favorite is garlic and cilantro sauce, and my son Matías is a real expert at making it. What we do is put all the ingredients in the food processor and blend everything until it becomes a creamy sauce, which we then thin out with a little water until it reaches the desired consistency—and then we’re ready to enjoy our empanadas.
