Chili Nachos

Ingredients

For the Chili:
🫒 1 tablespoon olive oil
🧅 1 diced onion
🧄 3 cloves chopped garlic
🥩 500g ground beef
🌿 1 teaspoon cumin
🧂 1 teaspoon garlic powder
🌶️ 2 tablespoons chili powder
🍬 1 teaspoon sugar
🧄 1/2 teaspoon onion salt
🧂 1/2 teaspoon adobo seasoning
🌶️ 1/4 teaspoon black pepper
🌶️ 1/4 teaspoon cayenne pepper (optional)
🍲 1 cup beef broth
🍅 2 tablespoons tomato paste
🍝 1 cup spaghetti sauce (garlic and herb)
🍅 1 can (400g) diced tomatoes and green chilies
🫘 1 can (400g) dark red kidney beans, drained and rinsed

For the Nachos:
🌮 Topping: Flour tortillas or store-bought tortilla chips
🥛 1 cup sour cream
🧀 1 cup shredded cheddar cheese
🌿 Fresh cilantro, for garnish


Instructions

1- Prepare the Chili:

  • In a large pot or skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
  • Add the ground beef, cooking and stirring until browned and cooked through.
  • Mix in the cumin, garlic powder, chili powder, sugar, onion salt, adobo seasoning, black pepper, and cayenne. Stir well to coat the meat with the spices.
  • Pour in the beef broth and bring to a simmer. Add the tomato paste, spaghetti sauce, diced tomatoes and green chilies, and kidney beans.
  • Stir to combine, lower the heat, and let it simmer for about 20-30 minutes, stirring occasionally, until flavors have melded together.

2- Assemble the Nachos:

  • If you're using flour tortillas, cut them into wedges and bake in a preheated oven at 180°C (350°F) until crispy.
  • On a large platter or baking dish, spread out the tortilla chips or baked tortilla wedges.
  • Spoon the hot chili over the chips, ensuring they are evenly covered. Sprinkle the shredded cheddar cheese over the top.
  • Place under a broiler or in the oven for a few minutes until the cheese melts.

3- Garnish and Serve:

  • Drizzle sour cream over the melted cheese and chili.
  • Garnish with fresh cilantro.
  • Serve immediately while hot and enjoy this comforting dish.
