Los panqueques o panquecas como solemos decir son parte de los desayunos en muchos hogares. Por lo general los realizamos con harina de trigo. Como todo ha evolucionado en varios aspectos, la creatividad en la cocina y la búsqueda de comer sano, sin harinas refinadas se han dado de acuerdo al ingenio y mezcla de diferentes ingredientes, a veces probando vamos obteniendo alimentos que vale el esfuerzo compartir. Esa chispa se va incrementando y luego comenzamos a quitar ingredientes o sustituir por otros. Como decimos, ensayo y error.
Para esta receta llevarla a la acción, se utilizó plátano verde (también se le conoce como plátano macho de acuerdo al país donde te encuentres.
Se usó:
300 gramos de plátano verde
100 gramos de avena en hojuelas
2 huevos
½ cucharadita de sal
½ cucharadita de polvo de hornear
½ cucharadita de canela en polvo
½ taza de agua
Procedimiento:
Primero quitamos la cáscara al plátano (concha como decimos los venezolanos), cortamos en trozos.
Vamos a la zona de la acción, usamos la licuadora. Colocamos el plátano, huevos, avena, sal, canela, polvo de hornear.
Licuamos todos los ingredientes por 2 minutos aproximadamente, vamos agregando el agua poco a poco, chequeando. Si la mezcla está muy densa puede agregar un poco más.
Si lo desea puede agregar azúcar, la que presento está sin dulce.
Se coloca el budare y se calienta. Cuando ya esté bien caliente, se unta con aceite. Va colocando una cantidad prudente de la mezcla preparada, dejar que dore para voltear.
Para esta cantidad de ingredientes se cocinaron 5 panqueques. Se acompañaron con queso llanero. Lo puede acompañar con lo que desee.
Tips: el plátano debe ser verde, si está un poco pintón la mezcla puede quedar demasiado suave, se dificulta un poco para voltear.

To make this recipe, we used green plantains (also known as plantains depending on the country).
We used:
300 grams of green plantains
100 grams of rolled oats
2 eggs
1/2 teaspoon of salt
1/2 teaspoon of baking powder
1/2 teaspoon of ground cinnamon
1/2 cup of water
Instructions:
First, peel the plantains (the "concha," as we say in Venezuela) and cut them into pieces. Next, we use a blender. Add the plantains, eggs, oats, salt, cinnamon, and baking powder.
Blend all the ingredients for about 2 minutes, gradually adding water as you go. If the mixture is too thick, you can add a little more.
If desired, you can add sugar; the recipe I'm showing here is unsweetened. Heat a griddle or pan (budare) on a hot surface. Once it's hot, grease it with oil. Pour a generous amount of the prepared mixture onto the griddle and let it cook. Cook until golden brown before flipping.
This amount of ingredients made 5 pancakes. They were served with llanero cheese. You can serve them with whatever you like.
Tip: The plantain should be green; if it's just starting to ripen, the batter might be too soft and difficult to flip.
