Something Sweet....
We couldn't believe how good this turned out! Can you believe it's VEGAN? Well it is. I tweaked this recipe from a blogger (https://itdoesnttastelikechicken.com/vegan-chocolate-pudding-cake/) who had already veganized the recipe from a different blogger. She's absolutely amazing and all the recipes I've ever tried taste absolutely scrumptious.
This pudding is made up of three layers but once it's done it turns into a delicious layer of mouthwatering, chocolately (Is this a word? So good it makes me make up words) dessert.
It wasn't too sweet; just perfect. I accompanied my pudding/fudge with some non-dairy Ben & Jerry's ice cream and some fresh strawberries.
I never carry white sugar in my house because it does not contain any vital nutrients and I only had 1/2 cup of brown sugar. So instead, I replaced the white sugar on https://itdoesnttastelikechicken.com/ recipe with coconut sugar which I had plenty of in my pantry. Next time I will try replacing the all purpose flour with whole wheat or almond flour. One baby step at a time.
