As a mother, I’m always looking for ways to sneak vegetables into meals without my kids noticing, since getting them to eat them is almost always a struggle. Since my goal is for them to eat their veggies, I have to “disguise” them to make sure they get the nutrients they need.

That’s why, whenever I can, I make this meat sauce, to which I add some vegetables that, while beneficial for my kids, go unnoticed by their taste buds—making it a great option for moms who struggle with kids (and even husbands) who refuse to eat them.

The best part is that it has few ingredients and is quite simple to make. Now, let’s get cooking before they figure out the trick.

Ingredients:

  • 1/2 kilo ground beef

  • 2 small beets or 1 large one

  • 1 medium carrot

  • Salt and pepper to taste

Preparation:

Wash and peel the beets and carrots. At this stage, you can either grate or blend them, depending on whether you want to leave some noticeable texture or blend them completely to hide them. In my case, I blended them this time, but every now and then I grate the carrots so they can see them and get used to the presence of this vegetable in some meals; even though I’m still a bit resistant to it, they still eat it.

Once blended (or grated), place in a skillet and add the ground beef, stirring until everything is well combined. At this point, add the seasonings. In this case, I used only salt and pepper.

Cover and let cook over low heat for 10 minutes, and that’s it!

Since I didn’t have onions or garlic at home, I didn’t add them, but it’s fine to add them blended or chopped. The novelty of this recipe really lies in adding ingredients we don’t traditionally include. You can even add broccoli or spinach instead of beets—that’s another recipe I’ll share with you soon.

One of the added benefits is that it makes a small portion of meat go a long way. This time, I had enough for two different meals: one day I served it with pasta and lots of cheese, and the next day I combined the leftovers with rice for lunch.

The best part is that my kids didn’t even notice the culinary trick, so I usually work my magic to make the meat go further this way.

I hope you can try this at home and let me know how it turned out.
