¡Hola comunidad de Hive Food! Hay días en los que una receta sencilla termina convirtiéndose en una agradable sorpresa, y eso fue exactamente lo que ocurrió con el plato que les comparto hoy. Mientras revisaba los ingredientes que tenía en casa, encontré unas berenjenas que hacía muchísimo tiempo no preparaba, y pensé que era una buena oportunidad para darles un lugar especial en el almuerzo. Así nació esta receta de pollo jugoso bañado en una salsa espesa con berenjenas. Lo que más me gustó fue que no requirió técnicas complicadas ni demasiados ingredientes, pero aun así logró un sabor increíble. Un paso que marcó la diferencia fue freír primero el pollo y luego aprovechar todos los jugos que quedaron en la sartén para preparar la salsa. Ese pequeño detalle hizo que cada bocado estuviera lleno de sabor y le dio un toque muy especial al plato.

While checking the ingredients I had at home, I found some eggplants that I hadn’t cooked in a very long time, and I thought it would be the perfect opportunity to give them a special place on my lunch menu. That’s how this juicy chicken covered in a thick eggplant sauce came to life. What I liked most was that it didn’t require complicated techniques or too many ingredients, yet it delivered an amazing flavor. One step made all the difference: frying the chicken first and then using the flavorful juices left in the pan to prepare the sauce. That simple detail added so much depth to the dish and made every bite even more delicious.

500 GR de pollo, 1 berenjena, 7 dientes de ajo, 120 ml de pasta de tomate, aceite, comino, sal, pimienta, 2 hojas de laurel, 1/2 taza de agua y 1/2 cucharada de azúcar.

Lavamos la berenjena y la cortamos en tiras, además machacamos los dientes de ajo, condimentamos las piezas de pollo con la mitad del ajo, comino, sal, pimienta al gusto, dejamos reposar 30 minutos.
Wash the eggplant and cut it into strips. Crush the garlic cloves, then season the chicken pieces with half of the garlic, cumin, salt, and pepper to taste. Let it sit for 30 minutes.
Al pasar los 30 minutos, calentamos un sartén, añadimos un poco de aceite y freímos el pollo, al estar semi dorado el pollo lo retiramos del fuego.
After 30 minutes, heat a skillet, add a little oil, and fry the chicken; once the chicken is lightly browned, remove it from the heat.
Aprovechamos los jugos del pollo para cocinar la salsa, añadan al sartén el resto de los ajos y la berenjena, incorporen además la pasta de tomate, 1/2 taza de agua y las hojas de laurel, dejen cocinar por 10 minutos para luego añadir el pollo, agreguen 1/2 cucharada de azúcar para balancear la acidez del tomate.
Use the chicken juices to make the sauce. Add the remaining garlic and the eggplant to the pan, along with the tomato paste, 1/2 cup of water, and the bay leaves. Let it cook for 10 minutes, then add the chicken. Add 1/2 tablespoon of sugar to balance the acidity of the tomatoes.
Dejen cocinar hasta espesar, verifiquen los sabores para saber si falta sal o algún otro condimento, al reducir la salsa estará lista la preparación.
Let it cook until it thickens; taste it to see if it needs salt or any other seasoning. Once the sauce has reduced, the dish is ready.
