GUYÁS HUS FROM HUNGRÍA

The gulyás is the Hungarian cowboy. His favorite dish is called gulyás hus, that is, "meat for the cowboy". The original recipe is made up of beef and onion, with the addition of cream, but not flour. In the beginning, paprika was not used, which comes from America and was not known in Europe at the time. Today, however, it is impossible to imagine a gulyás without it.

This dish became popular throughout the Austro-Hungarian Empire when a regiment carrying out its military service a large number of cowboys from the steppe of Hortobágy (in eastern Hungary) was transferred to Vienna. From there the fashion of gulyás spread all over the world. The Viennese have, however, to show a very special variant, in which they use beef accompanied by white bread rolls.

Next we will find the ingredients:

Ingredientes
  • 500 g of onion.
  • 100 g of lard.
  • 2 cloves of garlic
  • 5 tablespoons of tomato concentrate.
  • 1 kg. of beef.
  • 1 spoonful of paprika.
  • 4 tablespoons of sour cream.
  • Salt, clove and lemon casing to taste
Preparación

🍴 First step: Cut the onions into slices and then sauté them with the crushed garlic.

🍴 Second step: Add the minced meat in pieces. Sauté with the onion and garlic, and then add the tomato paste. Stir continuously.

🍴 Third step: Sprinkle the paprika adding a little water to taste. Allow the meat to cook slowly in a tightly closed pot.

🍴 Fourth step: Incorporate the clove, the lemon scrape and the salt to taste. Then add the sour cream and check if you need more salt and paprika.
