I Made Egg Rolls-A very nice Nigerian snack
I have always loved to eat snacks and egg rolls have been one of my best because of the egg in it, since I started baking-this is the first time I tried baking this snacks, so I decided to share my recipe and a step by step procedure.
Here are the ingredients for the dough
• All purpose flour - 2 and half cups
• sugar- 3 tablespoons
• butter - 1 and half tablespoons
• salt -1/2 tsp
• nutmeg- 1/4 tsp
• eggs- 1 egg
• 1/2 cup of milk
• 1 tsp baking powder
For the filling;
6 boiled eggs
FIRST STEP
The first step to take for this snack recipe is to boil the eggs for about 10-15mins to ensure that they are well cooked, because if not it would get difficult to role, after cooking them put them into room temperature water so that they can get cold so that the shells can be easy to remove.
SECOND STEP
Second step is to get a clean bowl, measure and sieve the flour into the bowl, measure the sugar into same bowl, measure the salt, nutmeg, baking powder after that give it a whisk then add the butter into the dry ingredients and mix with your hands to form something like crumbs.
After that mix the egg and milk in a separate bowl and whisk together, then gradually add it into dry ingredients and begin to mix to form a dough, after adding the milk and mixing it but the dough feels a bit strong, feel free to add in more milk but not much because we do not need the dough to be too soft too.
After getting your dough, it is advised to cover up with a cling film or a clean cloth and allow to rest for 10 mins.
STEP THREE
Take out your dough and cut into 6 pieces, I used a scale to measure 128g each of the dough to make sure that one isn’t bigger than the other.
Put your dough on a flat surface, take one at a time and stretch either by a rolling pin or with your hands but don’t over flatten it, put the egg in the middle and gently begin to cover it up making sure that no sides are open and again don’t over pressure, after covering each sides you can remove the excess and then use both hands roll it like a ball and then set aside, do thesame for each pieces.
STEP FIVE
After rolling each one, take a baking brush and egg wash each egg roll ( take a brush put in raw egg and used the brush to rub in the egg rolls).
Lastly take a baking pan, spread a baking paper on the
pan or you can slight rub butter on the pan and put the egg rolls on the pan, preheat the oven and bake on low heat for 20-25 mins, after taking it out of the oven I also brushed them lightly with butter.
You can enjoy with cold drink, or even ice cream.
I ended up getting fours egg rolls because two of eggs weren’t firm enough so I couldn’t roll.
