This "Spud's" for you!

The potato plants are dying back and now it's time to harvest. Last year was disappointing for potato's so we're hoping for a better crop this year.

We brought a wagon up with the lawn tractor and began digging under the watchful eye of Candy!
We also planted these potato's in a different garden this year in hopes of increasing our yield. It appears this decision helped production significantly!

Digging up potato's, better known as the tuberous crop from the perennial nightshade "Solanum Tuberosum" isn't easy work, however with two of us the chore is finished quickly. It's extremely satisfying to grow your own food, harvest and eat it knowing it hasn't been sprayed with chemicals that are probably causing most of the worlds health issues today.

Potato's are an excellent food source high in calcium, potassium, and vitamin C. They also contain iron, magnesium, phosphorus, sodium, zinc, copper, B vitamins, and folic acid. And the list goes on.
Potato's also produce glycoalkaloids which can be toxic, so stay away from the green ones!

Next we fill up the wagon with our bounty which was just shy of one hundred pounds of potatoes from two short rows.

Potato's are an easy crop to grow, store really well, and provide a lot of calories per square foot of garden. They can even be grown vertically in box's, tires, or whatever you're creative side might dream up.
