EASY Corn Fritters Recipe - Midwest Style

Looking for an EASY corn fritters recipe? Look no further! I have the easiest and tastiest corn fritter recipe just for you. Come along and watch how I make a delicious Midwest style corn fritters with instant pancake mix and a few other simple ingredients. Thanks for watching!
Ingredients:
2 Tbsp Granulated Sugar
1 15 oz Can Sweet Corn (Partially Drained)
1 Tbsp Vanilla Extract
1.5 Cups Instant Pancake Mix
1 Egg (optional)
3/4 Cup Milk (or substitute)
Bring shortening or cooking oil up to 350-370 degrees F
In a large mixing bowl mix wet ingredients
Add Instant pancake mix one half at a time until incorporated
Mix in partially drained sweet corn and sugar
If mix is too thick add milk; If too thin add more pancake mix
Drop dollops of mix into hot oil and cook until golden brown; flipping half way through
Move cooked fritters to a towel lined plate or bakers rack to drain
Top with powdered sugar or desired toppings and enjoy!
