BROCCOLI
This is a type of cauliflower. Outwardly similar to it, HO has a dense yellow- green OR purple head. Sometimes it is called asparagus: after cutting the main head, stem shoots grow out of the axils of the leaves, similar to Italy (Calabria), the birthplace of broccoli; on B asparagus. XVIII B. it was brought to Germany, and from there penetrated into Russia. Agronomist E. A. Grachev contributed to the spread of this type of cabbage. Abroad, especially in Italy and the USA, broccoli is very popular and successfully competes with cauliflower. Broccoli has a valuable composition and nutritional value higher than cauliflower. It has one and a half times more proteins, one and a half to two times more mineral salts, it is much richer in vitamin C - almost twice - and carotene - 50 times - compared to cauliflower. The presence of valuable substances and the content of IC in a favorable combination determine the high dietary and medicinal properties of this species. It is believed that the systematic use of broccoli in food prevents the development of atherosclerosis and the onset of premature old age. There are recommendations in the literature about the need to include broccoli in the menu of people who are being treated for radiation sickness.
