Prior to that, there are stories of nuns who baked these macarons during the French revolution to make money for their housing. Back then they were known as the Macaron sisters.
Later on, patisseries in Franch such as Lauduree made claim to being the first to create the "modern" macaron. These claims are well contested however with other bakeries such as Claude Gerbet also claiming to have been the inventor.
However, most people will agree that the town of Nancy where the Macaron sisters lived would be the very first example of any kind of macaron.
