This is one of my favourite quick and easy meals that is healthy for my family with very little prep time. My ORANGE FOOD IS CARROTS!!!

Here’s how to make it:

INGREDIENTS
Pack of 6 Chicken breasts (I buy deboned)
Packet of prewashed roasting vegetables
(carrots, baby marrow, string beans or anything similar)
Olive oil
4 medium Sweet potatoes - ours are yellow, but gem-squash are orange
Butter, salt and pepper
Packet of dry Brown Onion Soup

METHOD
Preheat the oven at 180C.
Steam the bag of veg for 5 minutes in the microwave or however you would usually steam you veg (I steam it in the bag that it is bought in)
Spray or grease a large roasting pan
Lay the chicken breasts evening in the pan
Place the partially cooked vegetables around the chicken breasts in the pan
Sprinkle the Brown onion powder over the chicken and veg - I use quite a lot!
Drizzle olive oil over the chicken and veg. Just enough to coat.
Place the pan uncovered in the middle of the oven and roast for 45 minutes.
While the food cooks, peel 4 sweet potatoes and chop into smallish chunks
Steam the sweet potatoes with 3 Tbsps water in the microwave for 8 minutes.
Check they are soft - if still firm them steam for a further 3 minutes (will depend on your microwave power)
When soft, add 3 Tbsns Butter or Margerine and salt and pepper to taste.
Mash well until smooth.
The roast should be a gorgeous brown with beautifully cooked veg.

Serve as pictured!

You really can’t go wrong with this meal and we probably have it for dinner once a week.
