Today we are going to prepare shredded fish, in this case cojinoa, a traditional recipe from Venezuela. When it comes to healthy and nutritious eating, fish is often the perfect accompaniment to an empanada or arepa, especially in the east of the country, where most cities are fishing areas.

Ingredients:

  • 2 cojinoas
  • 10 sweet peppers
  • 2 bell peppers
  • 2 onions
  • Salt to taste
  • 2 liters of water
  • Oil

Preparation:

I removed the guts and gills from the fish. Then I submerged them in water to clean them thoroughly. I made a diagonal cut for better cooking.

I put enough water in a pot to boil the fish, added a pinch of salt, and put a lid on it.

While this was happening, I removed all the seeds from the chili peppers and bell peppers. Then I washed them and chopped them into small squares. I removed the first layer of the onion and chopped it in the same way.

Then I sautéed the seasonings in a pan with a pinch of salt.

Meanwhile, I checked with a fork to see if the fish was ready, took it out of the water, waited for it to cool, and set about flaking it, removing all the bones. When it was ready, I added it to the seasonings.

I stirred well to blend the flavors, and the result was fantastic. This shredded fish recipe is very simple and practical. Although there are more exotic options such as dogfish, ray, and hake, they require more work and therefore more time, and you also have to deal with the ammonia smell that dogfish and ray give off.

I served my cojinoas with white rice, a perfect combination for a spectacular lunch.

Hoy vamos a preparar un pescado desmenuzado, en este caso una cojinoa, una receta tradicional de la mesa venezolana. Y es que cuando se trata de comer saludable y nutritivo, el pescado suele ser el complemento perfecto para una empanada o una arepa, sobre todo en el oriente del país, debido a que la mayoría de las ciudades constituyen zonas pesqueras.

  • 10 ajíes dulces
  • 2 pimentones
  • 2 cebollas
  • Sal al gusto
  • 2 litros de agua
  • Aceite

Preparación:

Extraje las vísceras y las agallas de los pescados. Luego los sumergí en agua para limpiarlos muy bien. Realicé un corte diagonal para una mejor cocción.

En una olla coloqué suficiente agua para sancochar los pescados, agregué un punto de sal y coloqué una tapa.

Mientras esto sucedía, me dispuse a retirar todas las semillas de los ajíes y pimentones. Luego los lavé y piqué en cuadritos. Retiré la primera capa de la cebolla y también la corté de igual manera.

Luego puse los aliños a sofreír en un sartén con un punto de sal.

Mientras tanto corroboré con un tenedor que el pescado estaba listo, lo saqué del agua, esperé que se enfriara y me dispuse a desmenuzarlo, extrayendo todas las espinas. Cuando estuvo listo, lo junté con los aliños.

Removí muy bien para integrar los sabores, el resultado fue grandioso. Esta receta de pescado desmenuzado es muy sencilla y práctica, si bien existen opciones más exóticas como el cazón, la raya y la merluza, llevan más trabajo, por lo tanto requieren más horas, y además se debe lidiar con el olor a amoniaco que desprenden el cazón y la raya.

Mis cojinoas las acompañé con arroz blanco, una combinación perfecta para un almuerzo espectacular.
