Corocoro is a very popular fish among the people of Cumana, since it’s relatively easy to find along the coast of Sucre. I can even find it fresh off the boat if I go to Caigüire Beach, where some fishermen sell their catch right there, so that was my first choice for buying some. This time I wanted to try something different, so I served it with French fries—a fun, crunchy twist on an Asian dish. Here’s the step-by-step guide.
Ingredients:
- 1 corocoro (fish)
- 2 medium potatoes
- Oil
- Salt to taste
Preparation:
The first thing I did was wash the fish thoroughly with plenty of water, then remove the guts, scales, and gills. I rinsed it again right away. I rubbed a little salt on it.
Then I added enough oil to a skillet and placed the fish in it to fry.
I washed the potatoes and peeled them, then cut them into sticks, ready to fry. I prepared another skillet and waited for it to heat up, then poured in oil. I placed the first batch of potatoes in it. I kept an eye on them so they wouldn’t burn, so I stirred them several times.
I waited about ten minutes for the fish to get crispy. Both the potatoes and the fish were ready at the same time, so I enjoyed a hot, light lunch. I loved this version, although I shouldn't overdo it with the oil, so this was a one-time exception.

El corocoro es un pescado muy popular para los cumaneses, dado que se puede conseguir con relativa facilidad en las costas sucrenses. Preparación:
Lo primero que hice fue lavar el pescado con suficiente agua, luego extraer las vísceras, las escamas y las agallas. Acto seguido lo enjuagué de nuevo. Le unté un poco de sal.
Luego agregué suficiente aceite a un sartén y allí coloqué el pescado para freír.
Lavé las papas y retiré las conchas, luego las dividí en palitos, listas para freír. Preparé otra sartén y esperé que calentara, luego vertí aceite. Allí coloqué la primera ración de papas. Supervisé para que no se quemaran, así que las removí varias veces.
Esperé unos diez minutos para que el pescado quedara crujiente. Tanto las papas como el pescado estuvieron listos al mismo tiempo, así que disfruté de un almuerzo caliente y ligero. Me encantó esta variante, aunque no debo abusar del aceite, así que fue una excepción por esta vez.
