Catfish Stew (Eng/Esp)

Now I’d like to introduce a dish that I doubt is prepared in any other state in Venezuela the way we do here in Cumaná. Without further ado, I present: Fresh catfish stew, a fish that’s in season, especially during the months of May, June, and August, on the beaches of Caigüire and in other areas of Sucre State.
To make this dish, I used: chili peppers, paprika, garlic, salt, onion, and one kilogram of catfish.
Preparation:
Chop the seasoning ingredients into small pieces. First, prepare the fish by removing the innards and cleaning it to ensure the stew turns out perfectly.
Sauté the mixture, adding salt to taste and a dash of vegetable oil. Olive oil is best. Once the mixture is sautéed, add the fish and half a glass of water. Cover with a lid and let it cook for twenty minutes.
Check on the fish and turn it over, making sure it’s cooked through. Let it cook like this for up to 10 more minutes.
Check again to ensure the fish is fully cooked. Once you’re sure it’s done, turn off the heat and serve.
We usually serve this succulent dish with arepas, casabe, yuca, or boiled taro. However, it has become a tradition to eat it with arepas.
This dish has an exquisite, unmatched flavor; everyone who tries it for the first time is amazed by how delicious it is. So be sure to try this dish, which is so characteristic of our Caigüire neighborhood in Cumana.

Ahora presento un platillo, que dificulto que lo hagan en otro estado de Venezuela como lo hacemos nosotros los cumaneses. Ni más ni menos les presento: El guisado de bagre fresco, un pez que se da por temporada, sobretodo por los meses de mayo, junio y agosto. En la playas de Caigüire, y otros sectores de la geografía del estado Sucre.
Para hacer efectivo este platillo usé: ají, pimentón, ajo, sal, cebolla y un kilogramo de bagre o pez gato.
Preparación:
Picamos el aliño en trocitos. Previamente se arregla el pescado, extrayendo las vísceras, y acondicionándolos para la preparación de mejor manera del guiso.
Sofreímos el guiso, añadiendo sal al gusto, y un toque de aceite vegetal. Si es de oliva mejor. Al verificar que el guiso está sofrito se añade el pescado, se le agrega medio vaso de agua. Se le coloca la tapa y se deje cocinar por veinte minutos.
Revisamos y volteamos el pescado. Procurando que el pescado esté cocido. Dejándolo así hasta por 10 minutos más.
Volvemos a revisar, y nos aseguramos que el pescado esté totalmente cocido. Ya asegurado esto último apagamos la llama, y procedemos a servir.
Generalmente acompañamos este suculento alimento con: arepas, casabe, yuca u ocumo sancochado. Aunque se ha hecho tradición que lo comamos con arepas.
Este platillo tiene un sabor exquisito inigualable, demostrado todo el que lo prueba por primera vez queda impactado por su sabrosura. Así intenta probar este plato tan autóctono de nuestro barrio Caigüire, en Cumaná.
