BOILED PLANTAIN AND CUCUMBER SAUCE.

Hello Hivers!

I hope your weekend was great. It's another Sunday, the beginning of a new week, and another day to share our creative content, without further ado, let's get right into it.

Here is another recipe I created and want to share with you, in case you missed the previous one, you can find it here. For a long time now, I have not bought plantain because the ones my parents planted at the backyard is yielding well. I used ripe plantain for this recipe. You may be wondering why I called it cucumber sauce when I have tomato and carrot added to it... well, it's because a good amount of cucumber was added.



Ingredients Needed

  • Ripe plantain (I used 2)
  • Fish stock
  • Fish chunks (already cooked)
  • Tomato paste
  • Blended pepper
  • Onions
  • Carrot
  • Cucumber
  • Cooking oil (canola oil)
  • Seasoning cube
  • Salt


Cooking Process

Plantain

The plantain was harvested from the backyard and left to ripe.


Steps

  1. I washed the plantain and took off the peel.

  1. Fetched some water in a pot and brought it to a boil.
  2. I cut the plantain into sizeable pieces and added it to the boiling water.
    Note: I did not bother to add salt to it because ripe plantain has a sweet taste.
  3. Cook the plantain until it is done. Then drain out the water.
  4. The plantain is ready and waiting for the sauce.

Cucumber Sauce

  1. I washed the onions, carrot and cucumber. Then sliced each of them.

  1. In a pan, I added the fish stock, fish chunks, tomato paste, blended pepper, cooking oil, seasoning cube, and a little salt and allowed it to saute.
  2. Then I added the onions and gave it a quick stir.
  3. I went ahead and added the carrot and cucumber and sauteed for a minute.


Pro Tip: At this point, it is advisable to cook on medium heat, and stir continuously. The idea is for the cucumber to get a bit tender but, still fresh. It's more enjoyable when the veggies are not dead (I mean, too soft).

  1. The cucumber sauce is ready to serve.

Let's eat

I added more fresh sliced cucumber on the plate as you can see below.


Serving Options

  • One way you can have this sauce served has been shown above with plantain.
  • In case you are not able to get plantain in your location, this goes well with any type of potato.
  • It can also go well with white rice, grilled fish, and grilled chicken.


Benefits

  • One of the benefits of ripe plantain I want to share from experience is its fibre content, which improves bowel movement.
  • It also enhances your mood (well, I feel happy whenever I eat ripe plantain either boiled, fried or roasted).

Conclusion
This is an easy delicious and nutritious recipe that takes less than an hour to make. I enjoyed the meal and the freshness of the veggies in the sauce.
