Hiya Everyone! Tori here! Today, I'll be showcasing a special Filipino kakanin (rice cake) which is Bibingka. This treat is usually eaten for breakfast, particularly during Christmas season. It is made up of glutinous rice which is soaked overnight in palm wine and is pounded to achieve a thick consistency, it will then be mixed with sugar, eggs, and coconut milk and then cooked in stone mills. I particularly love this treat since it truly reminds you of christmas time where the wind is cold and this treat will help soothe your cold insides.
