Ingredients:

  • ๐Ÿฅ” 5 lb russet potatoes, peeled & diced into 1-inch cubes
  • ๐Ÿฅ› 1 cup mayonnaise
  • ๐ŸŒญ 1 tbsp yellow mustard
  • ๐Ÿฅ’ 2-3 tbsp dill relish OR dill pickles, diced into small cubes
  • ๐ŸŒถ๏ธ 1-2 tbsp Cajun seasoning
  • ๐Ÿง… 1/2 cup green onions, chopped
  • ๐Ÿฅš 4 boiled eggs, whites chopped
  • ๐ŸŒถ๏ธ Paprika, to taste
    Instructions:
  1. Boil the Potatoes:
    • Bring a large pot of heavily salted water to a boil. Add the diced potatoes and cook until fork-tender, approximately 10-15 minutes.
  2. Prepare the Dressing:
    • While the potatoes are boiling, cut the boiled eggs in half and separate the yolks from the whites. In a medium bowl, mash the egg yolks with a fork or your clean hands until smooth.
    • Add the mayonnaise, yellow mustard, Cajun seasoning, and dill relish or pickles to the mashed yolks. Whisk until well combined and smooth.
  3. Combine Ingredients:
    • Stir the chopped egg whites and green onions into the yolk mixture.
    • Drain the hot diced potatoes and add them to the dressing. Gently fold the potatoes into the dressing using a fork, ensuring everything is well coated.
  4. Adjust Consistency (Optional):
    • If the potato salad appears dry, gradually add more mayonnaise, one scoop at a time, mixing until you reach the desired consistency. Adjust seasoning to taste if more mayonnaise is added.
  5. Chill the Salad:
    • Smooth out the top of the potato salad and sprinkle generously with paprika. Cover and refrigerate for at least 3 hours, although chilling overnight will enhance the flavors.
  6. Serve:
