- a dish for breakfast, which is a sandwich of two halves of a bun (English muffin) with eggs of poached, ham or bacon and Dutch sauce. It is popular in the United States of America.
There are several versions of this dish:
In an interview for The New Yorker magazine in 1942, broker Lemuel Benedict claimed to have visited the Waldorf Astoria hotel in 1894, hoping to find a cure for the morning hangover and ordered "toasts with butter, boiled eggs, bacon and Dutch sauce". Oscar Chirky, the head waiter of the restaurant, was so impressed with such a dish that he offered him for breakfast and dinner, replacing toast with ham on an English bun with bacon.
According to another version, Benedict's eggs were invented by the chef of Delmonico's restaurant in New York for Mr. and Mrs. Benedict, his frequent visitors. One day Mr. Benedict said to the head waiter: "Could you offer us something new?" And he got boiled eggs on toast with a thin slice of ham, Dutch sauce and truffles from above.
Despite the difference of opinion, Benedict eggs were cooked from poached eggs and Dutch sauce in the best restaurants in Paris, which gives them the right to call them traditionally French.
