Redbud a small tree with many uses
Redbud, attractive flowers, a nitrogen fixer, a bee forage flower and darn pretty.
The flowers of the redbud tree bloom in the early spring . You can harvest the flower buds and add them to salads and cook them in stir fries, The buds can be deep fried in a thin batter and you can also cook the flower buds in muffins and breads although the color fades when the buds are cooked. The redbud flowers have a fresh, tasty and sharp taste that will also go well with Yogurt and ice cream as a topping as well.
In addition the redbud is a legume, of the pea family that fixes nitrogen in it's roots for other plants and under my trees I have morel mushrooms established.
