I had a friend stop by, and I prepared a quick appetizer just because! I already have four boiled small potatoes in the refrigerator so...

I sliced each one in half and cut off a tiny portion from the bottom of each so it sits stable on the serving platter, and then I scooped the insides of the potato, leaving just enough for structure.

I placed the potato "insides" on a plate...

Then I proceeded to dress it, firstly with mayonnaise.

I chopped two small hard-boiled eggs.

And added the eggs to the potato & mayonnaise.

Added a little pepper. You may add salt if you wish.

And gave it a good mix.

Then fill each half of a potato with about a teaspoonful of the egg-potato-mayo mix.

Next, top the potatoes with cheese. Any shredded cheese will do.

Then bake the potatoes in a preheated 350-degree oven... 10 to 15 minutes.

When done, garnish with chives or any green leaf; I used green onions. You can use basil or chopped parsley...
