Ingredients of Coconut Flavored Rice Upma (6 Servings)
3 cup soaked idli rice
10 dry red chili
2 tablespoon dry mango powder
2 cup water
2 teaspoon urad dal
4 leaves curry leaves
1 1/2 cup coconut
salt as required
3 tablespoon peas
4 tablespoon coconut oil
2 teaspoon chana dal
6 cashews
How to make Coconut Flavored Rice Upma
Step 1
Firstly take a grinder jar and add soaked idli rice, grated coconut, 5 dry red chilies and 1 cup water to it . Grind all these together to make a coarse paste. Now, place a pan over medium flame and add coconut oil in it. Once it is hot, add the urad dal, chana dal, curry leaves, remaining dry red chilies, dry mango powder, peas and cashews in it. Saute it until you can smell the aroma and then add the ground paste in it.
Step 2
Mix the paste well with the spices and then cover it with a lid. Let it cook until the rice becomes tender. Stir with a ladle after every 5 minutes and add the remaining water to it. Let it cook until a roasted layer develops on top. once it is thick, cover and cook it with a lid on. When the water has evaporated, give it a final stir and take it off the flame. Transfer it onto a plate and serve it hot to enjoy!
