Homemade vegetarian Worcester sauce
If you like Worcester sauce but have turned vegetarian like me, here is an alternative I have adapted from two found recipes (mainly as ingredients are not easy to find in Greece). All items on list can be found in Greece!
2 cups apple-cider vinegar
1/2 cup soy sauce
1/4 cup brown sugar
1 teaspoon ground ginger
1 teaspoon ground yellow mustard seed or dry mustard
1 small red onion or onion powder (if you can find)
1 clove garlic, crushed
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly ground black pepper
1/4 tsp. *cayenne pepper
1/8 tsp. ground cloves or allspice
Add everything to a blender and blend together for a minute. Add to a small saucepan and bring to the boil. Turn down and simmer for 5 minutes. Leave to cool. Use what is required and store rest in fridge for up to 3 months.
