Beet and Cheese Arepas (Eng/Esp)
English version
When I woke up this morning, I was craving some delicious beet arepas, but this time I decided to add grated cheese and wheat flour to the batter—I wanted to try a different texture, and these new ingredients would help me achieve it. You should always let creativity work its magic in the kitchen.
Ingredients:
- 1 large beet
- 150 grams white corn flour
- 70 grams hard white cheese
- 3 tablespoons wheat flour
- Butter
- 2 cups water
- Salt
Preparation:
I washed the beets, peeled them, chopped them into pieces, and put them in the blender along with two cups of water. I blended until the mixture was slightly lumpy, then poured it—without straining—into a deep bowl. This would give the dough a different texture.
Then I added the white corn flour and began kneading. Once this step was complete, I added the wheat flour and salt, and continued kneading until the mixture felt smooth to the touch. At this point, I grated cheese on top and kneaded again.
Next, I heated up a griddle in the kitchen and wiped its surface with an oiled napkin. Once it was hot, I placed my three colorful arepas on it to cook. I cooked them over medium heat for twenty minutes, ten minutes on each side. I love it when a crispy crust forms.
Then I added butter, another helping of cheese inside, and also some ham—a filling that makes me happy. The combination turned out delicious, perfect for enjoying with the family and a good cup of coffee.
