Maple Balsamic Sweet Potatoes
Despite having the word “sweet” in their name, sweet potatoes are so versatile and fit in to dishes both savory and not. This way to prepare sweet potatoes brings out their naturally sweet flavor, that makes them great served as a side or with a savory dish. Or even just on their own.
I love sweet potatoes, they are probably one of my favorite foods. But cooked in balsamic, coconut oil, and maple syrup make them absolutely irresistible, and this is my absolute favorite way to enjoy them. This glaze takes an already great food and makes it out of this world delicious. Serve them on a bed of rice, mix them into your scrambled eggs, or eat them by the spoonful.
Ingredients:
- 2 large sweet potatoes
- 2 tablespoons coconut oil, melted
- 1 tablespoon balsamic vinegar
- 1 tablespoon maple syrup
- ½ teaspoon cinnamon
- ¼ teaspoon clove
- ¼ teaspoon salt
- Preheat oven to 450℉. Peel and dice sweet potatoes in to ½ inch cubes, place in a baking pan and set aside.
- In a measuring cup, mix together the coconut oil, balsamic, maple, salt, cinnamon, and clove.
- Pour the oil mixture over the sweet potatoes, stir to distribute evenly. Bake for 45-55 minutes.
