SALMON WITH CHILI SWEET AND QUINOA SAUCE
[Ingredients]
¾ cup raw quinoa
Sweet Chili Salmon:
4 4oz salmon fillets
¼ cup sweet chili sauce
2 tablespoons soy sauce
2 tablespoons of water
2 cloves garlic, minced
Roasted vegetables:
6 ounces / 170g snow peas (approximately 2 cups)
2 broccoli heads (approximately 4 cups), cut into small pieces
4 teaspoons olive oil
2 teaspoons soy sauce

This dish is special for those who prefer to eat healthier and are not fried and when you have a good disposition to use the oven and time for a good sauce you can make this divine dish that will surely be one of your favorites. It will not take you more than an hour to do it and of course your family and friends will thank you.
This recipe is made for four servings but as it is always known you can give it your personal touch and add more to give it up and enjoy it a lot. So prepare it and don't forget to share.
preparation:
Cook the quinoa according to the package instructions.
While the quinoa is cooking, heat the oven to 425 ° F. Cover a large baking sheet with parchment and set aside.
Salmon:
Beat together the sweet chili sauce, soy sauce, water and garlic. Pour on a 8x8 inch baking dish. Place the salmon, skin side up, over the sauce. Let it sit while the oven heats up.
Place in the oven and cook for 15-20 minutes, or until well cooked.
Roasted vegetables:
Place broccoli and peas in a large bowl. Mix with olive oil and soy sauce, until lightly coated.
Place in the oven and roast for 10-15 minutes, until cooked and tender.
To serve:
Place in a bowl the quinoa mattress and on top of the roasted vegetables and the psalms trying to create a good view are they finally take a large spoon of sauce and pour it over the salmon and quinoa.
