Pepper Chicken & Broccoli Recipe

Ingredients
🍗 4 chicken thighs, skin-on or skinless
🌶️ 1 teaspoon paprika
🧄 1 teaspoon garlic powder
🧅 1 teaspoon onion powder
🌶️ 1 teaspoon black pepper
🌽 2 tablespoons cornstarch
🧄 3 cloves garlic, minced
🧅 1 large onion, sliced
🌶️ 1 bell pepper (any color), sliced
🥦 1 cup broccoli florets
🍗 1 cup chicken broth
🥄 2 tablespoons hoisin sauce
🥫 2 tablespoons soy sauce
🌽 1 tablespoon cornstarch (for sauce)
🥄 1 tablespoon water (for cornstarch slurry)
Instructions
1- Prep the Chicken:
- Season the chicken thighs with paprika, garlic powder, onion powder, and black pepper.
- Add the cornstarch to the chicken, ensuring it’s evenly coated.
2- Cook the Chicken:
- Heat a large pan over medium-high heat.
- Add the chicken thighs to the pan, skin side down if applicable. Cook until golden brown and crispy on both sides, about 6-7 minutes per side.
- Remove the chicken from the pan and let it rest before chopping into bite-sized pieces.
3- Sauté the Vegetables:
- In the same pan, add garlic, onion, and bell pepper. Stir and cook until the vegetables are slightly tender, about 3-4 minutes.
- Add broccoli and sauté for an additional 2 minutes until just tender but still crisp.
4- Prepare the Sauce:
- In a bowl, combine chicken broth, hoisin sauce, soy sauce, and the cornstarch-water slurry. Mix well.
5- Combine Everything:
- Remove the vegetables from the pan.
- Return the chopped chicken to the pan, pour the sauce over, and stir to coat evenly.
- Add the veggies back into the pan. Let everything simmer together for about 2 minutes until the sauce thickens.
6- Serve:
- Plate the stir-fry and serve hot, over rice or noodles if desired.
